Victoria's food already earns high marks from passengers, but we are always endeavoring to upgrade our dining, to introduce new dining concepts and menus, including additional western dishes and a la carte dining, Victoria hired award wining celebrity chef and hospitality consultant Walter Staib. With five decades of experience, Chef Staib is a leader in the field, and has advised many large hotel chains and created nearly five hundred restaurants globally. He authored the books Black Forest Cuisine and City Tavern – Recipes from the Birthplace of American Cuisine, which include recipes he introduced aboard Victoria's ships. Chef Staib's nationally-televised PBS cooking program, A taste of history, has been honored with three Emmy Awards.
